SATA's Second Serve Cookbook
Two years ago, SATA published its first cookbook of player-submitted recipes entitled Serve It Up. This cookbook was an immediate success and raised funds for the junior youth program here in Sacramento. The cookbook sold out quickly and SATA received numerous requests for a second printing! Second Serve is SATA's second cookbook based on newly submitted recipes from its players. However, in addition to these interclub recipes, we reached outside SATA for some favorite recipes. Second Serve contains recipes from Andy Roddick, Venus Williams, and Martina Navratilova (to name a few) as well as from tennis clubs in Sacramento's sister cities on several continents! Here is a sample of one of the recipes in Second Serve:
ORZO WITH TOMATOES & FETA
(submitted by Carolyn Martin of Arden Park Tennis)
INGREDIENTS:
1/4 cup red wine vinegar 2 Tbsp. fresh lemon juice
1 tsp honey 1/2 cup olive oil
6 cups chicken broth 1 lb. orzo2 cups red & yellow grape tomatoes
7 oz. Feta cheese, cubed 1 cup chopped basil
1 cup chopped green onions 1/2 cup pine nuts, toasted
Whisk vinegar, lemon juice and honey in a small bowl. Gradually whisk in the oil. Season vinaigrette with salt and pepper. (Can be made 2 days in advance and chilled).
Bring broth to a boil in a heavy saucepan. Stir in orzo, reduce heat to medium heat and cover partially. Boil until tender but still firm. Drain. Transfer to a large wide bowl, tossing frequently until cool.
Mix tomatoes, feta, basil and green onions into orzo. Add vinaigrette; toss to coat. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.) Add pine nuts. Toss and serve.
